When in Print mode, my cylinder trip rack rides up the trip wedge and makes the carriage jump up right when the cam follower rolls off the top of the wedge. Is it possible to adjust this?

The warped trip rack will need to be replaced. Yours probably has the original design with 0.325″ side wall at the bolt slots on the toothed-side. The redesigned trip rack has a 0.562″ side wall on the toothed-side, as does the rack for the Universal III (X-17159). Replacement rack may require new rollers & bushings to retrofit.
